Lean fish (seer/rohu/tilapia—chef’s pick) is marinated with lemon, ginger-garlic, chilli, pepper, jeera, turmeric and a touch of kasuri methi, then tawa-seared or air-fried with measured oil for a crisp edge and juicy center. Blue default: no batter (or light rice-flour/besan dusting on request), no coconut/cream, low-sodium. Serve as a protein side with ½-cup Brown/Millet/White rice or small phulkas, plus salad/raita.
